Pachamama is opening this month in Green Brook at 215 Route 22, offering diners a mix of Latin and South American dishes, inspired by the best of Peruvian food. The restaurant is run by Driven Hospitality, which also runs Panela in Hoboken.
The kitchen is run by Ricardo Ramirez, a native of Lima and offers classic dishes like lomo saltado, steak with onions, tomatoes and fries, served over rice, pollo a la brasa, a Peruvian rotisserie chicken and pappardelle pesto with ossobuco.
The interior of the 3,000 square-foot restaurant is designed to evoke the spirit of nature, featuring 16-foot tree forming a canopy over the dining area, with floral arrangements and greenery suspended from the ceiling.
